What does kitchen ventilation 4.0 mean?

The “Industry 4.0” concept is also discussed in the building industry and terms such as “Refrigeration/Air Conditioning 4.0” or “Fire Protection 4.0” are used in this connection. In the area of commercial kitchen ventilation, the situation is as follows: In the past decades, hardly any groundbreaking innovations based on scientifically sound research and development results have been recorded with regard to ventilation and separation technology and the associated control systems. Exhaust hoods for private and commercial applications may look good and meet the design requirements of architects and designers, but whether they meet the technological requirements of modern kitchen ventilation is a completely different matter.

Smart ventilation technology is required for kitchen ventilation systems that claim compliance with “Industry 4.0” standards. This technology is characterised by the following features:

– intelligent and efficient capture of cooking fumes and exhaust air   

– intelligent control that addresses by means of  sensors and state-of-the-art ventilation flaps different zones in the kitchen as required

A smart ventilation system detects automatically where cooking equipment is in operation and how much ventilation power is needed there. This is done with the help of sensors. However, the data supplied by the sensors must be evaluated and used in a meaningful and intelligent manner. This way, the ventilation power can either be uniformly controlled for the entire kitchen or “shifted” between the different zones via state-of-the-art ventilation flaps. This makes the ventilation system much faster. In addition, the data supplied by the sensors can be used, for example, to autonomously and intelligently control lighting in the various zones. Because in zones where there is no cooking activity, there is usually no need for ventilation or lighting. The intelligent use of sensor data is therefore of utmost importance, but ventilation must of course also function efficiently! In order to ensure that cooking fumes are captured as completely as possible, far more than a conventional exhaust hood is required!

Intelligent ventilation systems, which meet the above-mentioned requirements, considerably reduce the CO2 footprint of the commercial kitchen and thus of the entire building. This is important for climate protection! Saving energy is the easiest and quickest way to protect the climate and save money in addition. Investments pay off through the reduction in energy costs. This also applies to buildings, which in Germany account for about one third of final energy consumption and CO2 emissions.
